		<description>I have a quick and delicious breakfast for you to try, an oven pancake or sometimes known as a Dutch Baby.
You need a cast iron frying pan or similar with low sides and oven proof. Cast iron is best.
preheat oven to 400&#039;F
Place 1/4 C butter in frying pan and place in the oven to melt, while the oven is preheating.
Whisk 4 eggs, 1 C milk, 1C flour together in a bowl.
When the butter is melted, pour in the egg mixture and put back in the oven for about 20 minutes, until the centre is puffed. (The sides will rise first in the hot pan)
This is where i usually take and shower and get dressed. It&#039;s ready when I come back to the kitchen.
Serve in wedges with maple syrup, jam, powdered sugar, whatever.
Sometime we throw some blueberries on top before going in the oven.
If you want to make a smaller one, use 3 eggs, 3/4 c each milk and flour. For larger: 5 eggs, 1 1/4 c each milk and flour. Just go up or down in 1/4 c increments and add a little less or a little more butter.

		<description>Do you know how long the mix of dry ingredients for the muffins would keep in a freezer or pantry? Seems like a great thing to keep on hand, but I&#039;m awful about thinking freezer=forever, and it doesn&#039;t really.
